  • So, Shenzi and I are a few weeks away from opening a rooftop bar overlooking Liberia's longest point break and since I'll be managing the bar, I thought it was time for a little bit of research.

How, exactly, do you make your favorite hot weather cocktail?

If I use your recipe, you get a free pitcher of cocktails when you come to the bar and a serving of ceviche.

    Hook it up!

  • Cranberry and Malibu on ice. I served it shaken after x-mas dinner. I had named it, "Santa get me the hell out of here and send me some place warm".

  • here is the trick with margaritas, sour mix and lime x are poison and should never be used with drinks.  A margarita a the juice of 1.5 limes 2 ounces silver tequilla and 1 ounce gran marnier or other orange liqueur.  You can flavor your salts and learn how to work with simple syrups which are equal parts sugar and water mixed with whatever flavors of your choosing.  I make a mint, lemon verbena, anise, symple syrup that I use for a take on a mojito but for you I would use whatever spices or fruits available.  Snaggle makes a bangn michelada which you cant beat on a hot day.  You can also infuse liquors with fruits and spices, you should only leave the fruit in the alocohol for 10 days and you get about three weeks to use the booze, watch the heat.  Also take a look at Imbibe.com its a great magazine and there are a number of really good links on the site.  I would be willing to come there and help you set up and show some drink recipes for room and board for Snaggle and I.  It has been said I will work for beer and more waves, its kind of true.
"Long Beach Rule you cant stand up on a bodyboard." Guillespe.  "I have the rules, it doesn't say that anywhere" me.  "Its our rule, its always been our rule, I make the rules" guillespe.  "Thats not really fair you just made that rule up" me.  "go to the surf beach" Guillespe.  "Wont I get kicked out for ridind a bodyboard" me. "Yes" Guillespe. Damned if I do, Damned if I dont.  We love LB

  • CAIPIRINHA:

1/2 a lime cut in quarters
1/2 to 1 TBSP of brown sugar (this is to taste)
    Crushed Ice
Cachaça - Pitú or Cachaça 51 (or whatever you can find, but HAS to be cachaça...no rum substitutes please)

Muddle the lime and the sugar in a lowball glass until u have a nice paste. Leave the limes there. Fill with crushed ice and pour Cachaça. Mix it well and serve with a small straw.

This is by far the best summer drink ever. But like everything, you have to master it. WARNING: these go down like water, so make sure you drink water in between drinks to keep hydrated, cause this will knock you out.. hehehe but it's soooooooo good.

  • The infamous "Vagina": Vodka and Orangina over ice.
I am wracked with such hearty guffaws, that in addition to rolling to and fro on the floor, my posterior has separated itself from my body.

  • Rocks glass, some ice, some dark rum about half way up the glass. A squeeze of lime or maybe crunch a few mint leaves between your fingers and toss it in. But not the mint and lime. Either or.

    And repete....

  • i can attest that the jscott mojito is really tasty.
which brings to mind...yes this is a little g@y.
something was missing from my IPA apple cider...
so poured it over crushed ice.
add two heaping spoonfuls of turbinado/natural sugar (because it has more of a molasses taste)
stir well (it's ok that the sugar doesn't melt).
something great about an alcoholic beverage over ice and sugar!

in costa rica i liked getting the mango-pineapple-coco smoothies.
fresh mango, fresh pineapple, then some spoonfuls of coconut cream from the can, milk, rum
    blend

    I soft-love you, I soft-hate you.

  • caught without ice yesterday evening when planning to make margaritas, arrived at the following:

make sour mix to taste of limes and sugar
tequila and triple sec at a 4:1 ratio to your desired strength
    pour over frozen pineapple
    blend

i was worried that the pineapple would smash the margarita taste. but the limes kicked it in the ass.
    total margarita taste.
    not watered down.
    the good.

Thanks for the feedback so far.

I'll get some pictures of the spot up soon and, @onefin, it's actually somewhat realistic that we could offer the place up for brief periods of substitute management--even just for a few nights. i'm sure we'll love to get away from it when it becomes our normal thing.

the break in front of the bar only works with at least 7' of pure swell wrapping--but it can hold up to 14' and is well protected from the wind (usually). on a good day, the wave has numerous extraordinarily different sections. if you link them together, you can be riding well over 250yards. this is one of the only spots that doesn't get annihilated during the monsoons of july and august.

but the beaches are at least 30 minutes south east and the pimpin' left points are 2 hours north west.

    just fyi.
